I'd love to try to make an organic version of Ding Dongs. There are some Ding Dongs cake recipes floating around the Net so perhaps I should use one of
those as a starting point?

There are Twinkie wedding cakes. There used to be a picture on the internet of a Twinkie croquembouche. That was a HOOT!
